Shakshuka with a Bloody Mary Twist: A Flavourful Brunch Delight

Combining the rich flavours of traditional Shakshuka with the bold kick of Cox’s Originals Bloody Mary Mixer, this dish is a true culinary adventure. Plus, it's easy to make and perfect for sharing. Let's dive into the recipe!

 Ingredients:

  • 1 white onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tin tomatoes
  • 300ml water
  • 230g butter beans
  • 1 tsp Cox’s Originals Bloody Mary mixer
  • 1 bay leaf
  • 1 tbsp smoked paprika
  • ½ tsp salt
  • ½ tsp chilli flakes
  • ½ tsp cumin
  • ½ tsp dried parsley

Method:

  1. Sauté the Onion & Garlic: Finely chop the onion and sauté in a large pan with olive oil for 5 minutes until soft. Add minced garlic and cook for another minute.
  2. Simmer the Base: Add tomatoes, water, beans, Bloody Mary Mixer, bay leaf, smoked paprika, salt, chilli flakes, cumin, and dried parsley. Stir and simmer for 10 minutes.
  3. Add Eggs or Vegan Option: For eggs, crack three on top and bake at 180ºC for 4-5 minutes until set. Top with parsley, black pepper, salt, and Bloody Mary Spicer. Add vegan crème fraîche mixed with Bloody Mary Mixer for a vegan option. Top with parsley or chives, black pepper, and salt.
  4. Serve and Enjoy: Squeeze half a lime before serving and garnish with fresh parsley leaves.
