Ingredients:
- 1 red onion
- 1 stalk celery
- 3 cloves garlic
- 1 tbsp tomato puree
- 1 large red pepper
- 3-4 vegan chorizo sausages
- 1 400g tin chopped tomatoes
- 2 tbsp Cox’s Original Bloody Mary Mixer
- 250ml water
- 1 tbsp smoked paprika
- 1/4 tsp salt
- 1 bay leaf
- 1 tsp sage
Method:
- Cook the Pasta: Boil water with a pinch of salt. Cook pasta as per packet instructions (approx. 12 mins). Drain and set aside.
- Sauté the Vegetables: Finely chop onion and celery. Sauté in 1 tsp olive oil for 6-7 minutes until soft.
- Add Pepper and Sausages: Chop red pepper and vegan chorizo into bite-sized chunks. Add to the pan and cook for a few minutes.
- Add Garlic: Finely chop garlic and add to the pan. Cook for 2 minutes until fragrant.
