Ingredients:
- 1 tbsp olive oil
- 1 tbsp Cox’s Original Bloody Mary Mixer,
- 1 red onion
- 4 cloves garlic
- 1 400g tin butter beans or black beans
- 80g kale
- 200g passata
- 700ml vegetable stock
- ½ cup dried orzo
- 1 bay leaf
- ½ tsp salt
- 3 tbsp fresh pesto
Method:
- Sauté the Onion: Finely chop the red onion and add it to a pot with 1 tbsp of olive oil. Fry for around 5-6 minutes until the onion is soft and translucent.
- Add the Garlic: Mince the garlic cloves and add them to the pot. Fry for an additional minute, stirring frequently to prevent burning.
- Simmer the Base: Add the passata, vegetable stock, drained beans, and bay leaf to the pot. Bring the mixture to a simmer and cook for about 5 minutes.

Add Remaining Ingredients: Stir 1 tbsp of
Bloody Mary Mixer, chopped kale, orzo, and ½ tsp of salt. Continue to simmer for another 10 minutes or until the orzo is cooked through. - Taste and Adjust: Taste the soup and adjust the seasoning with more spicer or salt if needed.
- Serve: Ladle the soup into bowls and top each with 1 tbsp of fresh pesto.
