Shakshuka with a Bloody Mary Twist: A Flavorful Brunch Delight

 Ingredients:

  • 1 white onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tin tomatoes
  • 300ml water
  • 230g butter beans
  • 1 tsp Cox’s Bloody Mary Spicer
  • 1 bay leaf
  • 1 tbsp smoked paprika
  • ½ tsp salt
  • ½ tsp chilli flakes
  • ½ tsp cumin
  • ½ tsp dried parsley

Toppings:

  • 1 egg (for a vegan option, use plant-based crème fraîche)
  • 1 tsp Cox’s Bloody Mary Spicer
  • ½ lime
  • Fresh parsley leaves

Method:

  1. Sauté the Onion & Garlic: Finely chop the onion and sauté in a large pan with olive oil for 5 minutes until soft. Add minced garlic and cook for another minute.
  2. Simmer the Base: Add tomatoes, water, beans, Cox’s Bloody Mary Spicer, bay leaf, smoked paprika, salt, chilli flakes, cumin, and dried parsley. Stir and simmer for 10 minutes.
  3. Add Eggs or Vegan Option: For eggs, crack three on top and bake at 180ºC for 4-5 minutes until set. Top with parsley, black pepper, salt, and Cox’s Bloody Mary Spicer. Add vegan crème fraîche mixed with Cox’s Bloody Mary Spicer for a vegan option. Top with parsley or chives, black pepper, and salt.
  4. Serve and Enjoy: Squeeze half a lime before serving and garnish with fresh parsley leaves.
